At the time, velvet cakes took on a reddish-brown hue due to chemical interactions with some ingredients. During World War II, the red shade came from adding beetroot, as shortages in supplies called for some substitutes.

The distinctive red velvet color we know today didn’t come about until the invention of a specific red food coloring in the 20th century. The red shade took on meaning to commemorate the hardship enslaved African Americans endured. Today, it’s still brought to the table in celebration and remembrance.
